Pasta Salad is my go-to side dish in the summer.
For the last 3 years I have always had fresh veggies from the garden, so this is a simple side dish that I can bring to a BBQ using my very own fresh produce right from my garden! I love being able to throw together simple ingredients and make something delicious out of it!
The reason I love this so much is it is so versatile…. You can really take this base recipe and add whatever fresh veggies, meats, or cheeses, that you want.
I make this both regular (using mini bow tie pasta) and gluten free (using Barilla Rotini pasta). I have also used Barilla’s gluten free elbow pasta to make it gluten free. Both turned out great!
I tried to give measurements as much as I could but most of this is just eye balling it to see how much of each ingredient you want to add.
Pasta Salad
Materials
- 8 oz Any kind of pasta I like mini bow tie for regular and Barilla's gluten free rotini for gluten free.
- 1 container zesty Italian dressing
- 1 bell pepper
- 1 small cucumber
- 10 cherry tomatoes
- 1 handful of thick salami sliced
- 1 package of mozzarella pearls
- 1/8 cup sunflower seeds
Instructions
- Cook pasta until el dente. Put in fridge to cool completely.
- Once pasta has cooled completely, dice up all other ingredients and toss in with the pasta.
- Top with Zesty Italian dressing and toss until everything is coated.
- Keep in fridge until ready to serve. Enjoy!
In this summer-time this refreshing pasta salad is a perfect cool side dish to make to go with any BBQ meats!
