Berry Cobbler? Yes please!
The best part about this recipe is it is so simple, plus you can use the same recipe with any kind of fruit. It doesn’t even matter if your fruit is frozen or fresh, that’s how simple this is.
You can whip this together in no time, top it with a scoop of vanilla ice cream and you have a delicious dessert to serve!
This recipe makes a 9×6 size baking dish, but you can double it to make a 9×13 pan if you’re feeding a crowd.
Gluten Free Berry Cobbler
Materials
- 3 Cups Mixed Berries (frozen or fresh)
- 1/2 TBSP Lemon Juice
- 1 Cup Gluten Free All Purpose Flour I use Cup 4 Cup
- 1/2 tsp Baking Powder
- 1/2 tsp Salt
- 1/2 Cup Softened Butter
- 3/4 Cup Packed Brown Sugar
- 1 tsp Vanilla
Instructions
- Preheat oven to 375° and spray a 9×6 pan with nonstick spray.
- Add mixed berries to your pan and drizzle lemon juice over the top.
- Whisk flour, baking powder, and salt in a small bowl and set aside.
- In a stand mixer or with a hand mixer beat butter, brown sugar, and vanilla until well incorporated.
- Add in flour mixture. Mix until it forms a crumble.
- Drop the dough evenly on top of the berries.
- Bake at 375° for 30 minutes or until golden brown.
