Chocolate chip mini muffins has been a staple in my house for a while. The girls love them and there are never any left overs when I make these.
In fact, if I’m not quick enough I won’t even get any at all!
The recipe I am sharing below is with gluten free all-purpose flour, Cup 4 Cup. However, you can use any all-purpose flour including regular non-gluten free flour if you do not have to be gluten free.
The great thing about these muffins is they are quick, easy, and perfect for on the go. They are small enough to pop in your mouth and they don’t take long to make. Win win!
I often whip up a batch before they go to the hills to gather or work cattle because it is a snack, they can munch on all morning long when hunger strikes.
Gluten Free Chocolate Chip Mini Muffins
Materials
- 1 1/2 Cup Gluten Free All Purpose Flour I use Cup 4 Cup
- 3/4 Cup Sugar
- 2 tsp Baking Powder
- 1/2 tsp Salt
- 1/3 Cup Olive Oil or any oil
- 1 tsp vanilla
- 1 egg
- 1/2 Cup Milk
- 1/2 Cup Mini Chocolate Chips
Instructions
- Add flour, sugar, baking powder, and salt to a medium bowl and mix to combine.
- Add in oil, egg, vanilla, and milk. Mix together until all incorporated.
- Fold in mini chocolate chips.
- Pre-heat oven to 350° and grease a mini muffin tin. Spoon in mixture to about 3/4 a way full on each muffin tin.
- Bake for about 10 minutes or until golden brown. Enjoy!
