Gluten Free Donut Hole Muffins

Mini muffins are my absolute favorite because they are easy to make and even easier to bring on the go. Sometimes it feels like we are always so busy, and these are perfect to make and take along for the ride.

These gluten free cinnamon sugar mini donut hole muffins taste just like donut holes. The problem with these muffins is you can’t stop eating them! You just want more and more!

If you do not have to be gluten free simple use a regular all purpose flour instead of Cup 4 Cup. It’s that simple!

You can always use a regular size muffin tin if desired, but I like them mini! You just have to adjust the bake time for a little longer if you are using regular sized muffin tins.

Gluten Free Cinnamon Sugar Donut Hole Mini Muffin

Materials

  • 2 Cups All Purpose Gluten Free Flour I use Cup 4 Cup
  • 1 1/2 Cups Sugar
  • 2 tsp Baking Powder
  • 1/2 tsp Salt
  • 1 tsp Ground Cinnamon
  • 1 1/4 Cup Milk
  • 1 Egg
  • 2 TBSP Butter, melted
  • 1 tsp Vanilla

Topping

  • 6 TBSP Butter, Melted
  • 1/2 Cup Sugar
  • 1 tsp Ground Cinnamon

Instructions

  • Preheat oven to 350° and spray mini muffin tins with non-stick spray and set aside.
  • Mix flour, sugar, baking powder, salt, and cinnamon in a medium bowl until combined.
  • In a measuring cup melt butter. Add in milk, egg, and vanilla. Mix until combined.
  • Pour wet ingredients into the dry ingredient. Mix until all is incorporated.
  • Fill each muffin tin to about 2/3 way full.
  • Bake for 12-15 minutes or until golden. Remove from oven and let sit in the pan for 5 min. Remove from the pan and let muffins cool completely on drying rack.
  • While muffins are cooling, melt 6 TBSP butter in a small bowl.
  • In a separate small bowl mix the sugar and cinnamon.
  • Once muffins are all the way cool, dip the tops of each muffin in the butter and then in the cinnamon/sugar mix as the topping.
  • Enjoy!
