Black Bean Brownies That are Simple and Healthy

If you are looking for something sweet to eat but you are trying hard to stay away from loads of sugar…. these healthy and delicious black bean brownies are for you!

This week I have been canning away! I have canned meals in a jar, pickles, and even black beans. The days have been full and productive here on the homestead.

When getting ready to wipe my jars and add them to my shelves, I noticed one of my pint jars of black beans didn’t seal properly. Make sure to check out how I can all my own dry beans right here at home!

This doesn’t mean the food in that jar is bad, it just means it isn’t shelf stable!

Now I could have put that jar into my fridge and use it in some form of soup or meal later in the week. However, it is incredible hot here in Missouri this time of year, so eating a soup or hot meal with black beans just doesn’t sound appealing right now.

So I chose to make something sweet with them…

Black Bean Brownies that are Simple, Delicious AND Healthy.

These black bean brownies are so simple to make and they are so ooey-gooey when eating. You won’t even know they are healthy!

I make these brownies with a food processor, but you can also use a blender if you don’t have a food processer.

Here is what you need:

  • 1 pint jar of home canned black beans (or 1 can of black beans from the store) drained and rinsed
  • 2 TBSP cocoa powder
  • 1/2 cup quick gluten free oats (regular quick oats if you don’t need to be gluten free)
  • 1/4 tsp salt
  • 1/2 cup pure maple syrup
  • 1/4 cup coconut oil
  • 2 tsp vanilla
  • 1/2 tsp baking powder
  • 2/3 cup chocolate chips (plus more for sprinkling)

Here’s what you do:

  1. Add all the ingredients but the chocolate chips into a food processor or blender.
  2. Blend on high until evenly distributed and the batter is smooth
  3. Pour in 2/3 cup of chocolate chips and stir well with a spoon
  4. Pour into a well buttered 8×8 baking dish
  5. Sprinkle additional chocolate chips on the top
  6. Bake at 350 degrees for 12-15 minutes.
  7. They will be super gooey at first but will set up as they cool. If they still don’t set up after they are cool, pop them in the fridge for an hour!

A few notes about the recipe:

I have never tried this recipe without using quick oats, so I can’t say if old fashioned rolled oats will work. But I plan to do so and will update when I do! If you do try it with rolled oats make sure to comment below!

Make sure not to omit the chocolate chips stirred into the batter. You will not get an ooey-gooey product if you do. You are welcome to avoid sprinkling additional on top, but they do make them taste that much better!

I tend to substitute out cane sugar whenever I can so I choose to use all maple syrup in this recipe. If you would like a little sweeter brownie, although I feel they are plenty sweet with all maple syrup, you can do 1/3 cup of maple syrup plus 2 TBSP cane sugar.

The best thing about these healthy black bean brownies is that they are kid approved! My girls get their fair share of sugary sweets, so when I can make a dessert that they devour but are healthy I am all in!

Their favorite way to eat these brownies is with some ice cream over top… they make the best fudgy brownie ice cream Sunday! Although they are delicious just by themself.

Healthy and Delicious Black Bean Brownies

These healthy and delicious black bean brownies use no flour and have only simple healthy ingredients. They are ooey and gooey and sure to please a crowd! With only a few simple ingredients and a food processor, you can whip these up in no time! The best part is, they are kid approved!

Equipment

  • Food Processor or Blender

Materials

  • 1 pint jar Black Beans, drained and rinsed You can use a can of black beans from the store.
  • 2 TBSP Cocoa Powder
  • 1/2 Cup Quick Oats Use gluten free if needed
  • 1/4 tsp Salt
  • 1/2 cup Pure Maple Syrup Can also use 1/3 cup syrup plus 2 TBSP Sugar
  • 1/4 cup Coconut Oil
  • 2 tsp Vanilla
  • 1/2 tsp Baking Powder
  • 2/3 cup Chocolate Chips Plus more for sprinkling on top

Instructions

  • Add all ingredients but the chocolate chips into a food processor or blender.
  • Blend on high for 2-4 min or until the mixture is completely smooth.
  • Add in 2/3 cup chocolate chips and stir with a spoon to combine.
  • Pour into a well buttered 8×8 baking dish.
  • Sprinkle additional chocolate chips on top.
  • Bake at 350° for 12-15 minutes or until set.
  • Brownies will be gooey, so let cool completely before cutting. Pop in the fridge for an hour if its warm in your house and they aren't setting up.
