These healthy cheddar meatballs are always on the menu lineup every week.
Our freezer is always stocked with pounds and pounds of ground beef. I guess that just goes along with being a beef ranchers wife!
Finding ways to use up all my ground beef is so important.
These healthy cheddar meatballs are a family favorite and a great way to use up all my ground beef. I make them for lunch or dinner and the whole family loves them!
They make for an easy dinner recipe that I don’t really have to even think about. Pair these healthy meatballs with a side of mashed potatoes, side salad, or my homemade gluten free rice a roni and you are set! I love finding a healthy dinner idea that is also easy to make. That is winning on all levels.
These would also make a perfect fun appetizer. You could follow the directions below and then place them in a slow cooker to stay warm. You will please every guest at the next party you bring these to!
Where to buy ingredients.
Besides the ground beef most of the ingredients come from Azure Standard. This is the grocery co-op that I use every single month to buy all my bulk ingredients.

Ingredients:
- 1lb ground beef
- 4oz soft cream cheese
- 1 TBSP minced dry onions
- 2 tsp baking powder
- 1 cup shredded cheddar cheese
- 1 large egg
- 3/4 cup almond flour
- 1/2 tsp salt
Directions:
- Pre heat oven to 350 degrees and oil a sheet pan.
- Add all ingredients to a large mixing bowl. Use your hands to mix it all together.
- Taking about 2 TBSP of the mixture at a time, shape it into a 2″ ball and place meatballs on your prepared baking sheet in a single layer. I don’t typically use exact measurements but if you want to make them all uniform, use a cookie scoop.
- Bake in preheated oven for 20-25 minutes. They will be golden brown and the cheese will slightly be oozing out.
- Serve immediately with your favorite side.
- Store leftovers in an airtight container.
Can I make any substitutions?
In all my recipes there is room for substitutions to make the dish to your liking! Of course, when I share the recipe we love it the way I am sharing it, but there is always room for substitutions.
These cheddar meatballs are naturally gluten free with very simple ingredients. Using almond flour in the recipe instead of bread crumbs is why.
If you would prefer to use breadcrumbs in place of the almond flour, that is fine.
Here are some different ways to change these meatballs up and get a variety of flavors.
You could change the cheese you are using to add a different flavor. I always use white cheddar cheese in mine. However, pepper jack cheese, sharp cheddar cheese, or even some mozzarella cheese would change the flavor and give you variety!
Another way to switch it up is with the spices! You can add things like garlic powder, more salt, Italian seasoning, and onion powder in place of the dried flakes. Switch things up to adjust the taste to your own.
These healthy cheddar meatballs would also be great with marinara sauce on top of a bed of pasta. If I was doing them for this, I would probably add in some fresh basil or oregano.

Easy prep ahead of time.
This delicious meatball recipe can easily be prepped ahead of time. So on your next meal prep day, make a batch of these meatballs and pop the pan in the fridge.
When you are ready to bake them simply pull them out and bake according to the above directions.
This recipe easily doubles or even triples. So you can make a big batch and have meatballs prepped and ready for weeks to come!
