Whether you were just diagnosed with an allergy to gluten or you have lived your whole life with it, there are some things that are just missed.
One of those things for me was Chinese food.
Most all Chinese food is not gluten free for a few reasons. One, everything is usually breaded/fried which of course isn’t gluten free. But also, the different sauces they use aren’t gluten free. So, to the naked eye you would think fried rice would be gluten free, when in fact it is not because of the sauces they use in it.
While this recipe I am going to share with you today isn’t for fried rice, I think you will be excited for what I got!
This recipe gives you the breaded/fried chicken bites, yummy sweet and sour sauce, and is served so nicely over white rice! The beauty of this recipe, you likely have everything you need to make it!
Gluten Free Sweet and Sour Chicken
Materials
- 3 Chicken Breasts
- Salt and Pepper to taste
- 1 Cup Corn Starch
- 2 Eggs, beaten
- 1/4 Cup Olive Oil
For The Sauce
- 1/2 Cup Sugar
- 4 TBSP Ketchup
- 1/2 Cup Apple Cider Vinegar
- 1 TBSP Soy Sauce Use La Choy brand so its gluten free!
- 1 TSP Garlic Salt
Instructions
- Preheat oven to 325 degrees
- Cut the chicken into 1 inch pieces. Season with salt and pepper to taste and place in a gallon size Ziploc bag. Add cornstarch, seal, and toss so they are evenly coated.
- Whisk the eggs in a bowl. Heat your oil in a pan. Do not add chicken until the oil is very hot!
- Dip the cornstarch coated chicken into the whisked eggs and place in a single layer in the pan.
- Cook for 20-30 seconds on each side. Do not cook the chicken all the way through. You may have to do this in phases if all your chicken pieces don't fit in your pan at one time in a single layer.
- Place the chicken pieces in a single layer in a 9×13 baking dish.
- Mix up your sauce ingredients and pour over the chicken in the baking dish.
- Bake for 1 hour turning the chicken pieces 1-2 times within the hour.
- Serve over white rice and enjoy!
