Instructions
Preheat oven to 325 degrees
Cut the chicken into 1 inch pieces. Season with salt and pepper to taste and place in a gallon size Ziploc bag. Add cornstarch, seal, and toss so they are evenly coated.
Whisk the eggs in a bowl. Heat your oil in a pan. Do not add chicken until the oil is very hot!
Dip the cornstarch coated chicken into the whisked eggs and place in a single layer in the pan.
Cook for 20-30 seconds on each side. Do not cook the chicken all the way through. You may have to do this in phases if all your chicken pieces don't fit in your pan at one time in a single layer.
Place the chicken pieces in a single layer in a 9x13 baking dish.
Mix up your sauce ingredients and pour over the chicken in the baking dish.
Bake for 1 hour turning the chicken pieces 1-2 times within the hour.
