It’s breakfast time again and I have 6 beady eyes staring at me for breakfast. They all expect the normal, eggs or pancakes or oatmeal until I smile and say…. “we are having chocolate muffins!”
Now instead of my house being filled with whines of “I’m hungry!” My house is filled with screaming, jumping, clapping, and a whole lot of “yays!”
When I first made these muffins, the girls were so excited, I mean who wouldn’t be excited to have double chocolate muffins for breakfast?!?! They quickly became a favorite. I try not to do it all the time because let’s be honest, it’s basically chocolate for breakfast. So, when I do make them, it makes these muffins all the more special and exciting!
This Chocolate Chocolate Chip Mini Muffin recipe is easy to make, can be adapted to gluten free easily (that’s what I do!), and pleasing to even the pickiest eater. These are great for breakfast, to bring to a play date to share, or to just have as a snack to munch on.
Chocolate, Chocolate Chip Mini Muffins
Materials
- 1.5 cups All Purpose Gluten Free Flour I use Cup 4 Cup
- 1/2 cup Sugar You can use cane sugar, maple sugar, or coconut sugar
- 2 tsp Baking Powder
- 1/2 tsp Salt
- 1/4 cup Cocoa Powder
- 1/3 cup Oil
- 1 Egg
- 1 tsp Vanilla
- 1/2 cup Milk
- 1/2 cup Mini Chocolate Chips
Instructions
- Preheat oven to 375° and spray a mini muffin pan with non-stick spray.
- In a large bowl mix together flour, sugar, baking powder, salt, and cocoa powder until it is all combined.
- Add in oil, egg, vanilla, and milk and mix just until combined.
- Fold In mini chocolate chips.
- Fill each muffin tin to about 3/4 way full and bake at 375° for about 10 minutes or until a toothpick inserted comes out clean. Enjoy!

Now sit back and enjoy a muffin…. or 10! Full disclosure…… these little guys are easy to pop into your mouth and can be addicting, so be cautioned and try and use self control! 😅
If you happen to have any left overs (that never happens in my house) make sure to store them in an air tight container or Ziploc bag because they will dry out if you leave them just sitting on the counter.

If you want to make these as regular size muffins with regular size chips, how long should you cook them?

I have never done them in the big muffin pans but I would start checking them at 15 minutes. They may need longer then that but without trying it myself I don’t want to tell you 20 minutes and then they burn!
