Freshly baked homemade warm dinner rolls….
Such a treat! Being gluten free you never take for granted something as delicious as a warm dinner roll. You know that fresh baked bread, that you can actually eat, is a luxury.
But what if I told you, it didn’t have to be?
Baking my own gluten free bread products was something that highly intimidated me in the beginning, but also something I desperately wanted to be good at. I was tired of the store-bought gluten free prices, tired of the lack of nutritional value in them, and tired of getting a product that wasn’t always great.
So, I started making my own.
But rest assured, this didn’t come easy. I struggled a lot! I had a lot of failed attempts (I still have some when trying a new recipe!). There were plenty of loaves that I baked, we all took 1 bite, and immediately threw away.
But I kept trying.
I kept learning.
And I didn’t give up.
A couple weeks ago I shared my all-time favorite gluten free sandwich bread that we make at least twice a week.
This week I am going to share a favorite dinner roll recipe! The best thing about this recipe… It can be a staple recipe to use for many other products! This recipe is great as hamburger buns and French bread as well. You just have to shape the batter differently.
The main thing you need for this recipe is a stand mixer or hand mixer (I prefer a stand mixer). And the rest is probably all ingredients you have!
I use the same flours in this recipe as I do in my sandwich bread recipe, so if you are like me and buy in bulk, you don’t have to have multiple different flours for all your bread needs. That’s a huge plus in my book!

Delicious Gluten Free Dinner Rolls
Equipment
- Stand mixer or hand mixer
Materials
- 1/4 cup warm water
- 1/4 tsp sugar
- 2 1/4 tsp active dry yeast
- 1 1/2 cup brown rice flour you can use white rice flour if you prefer.
- 1 1/2 cup tapioca flour
- 3 tsp xanthan gum
- 1 1/2 tsp salt
- 2 TBSP sugar
- 1 1/4 cup warm water
- 2 TBSP melted butter
- 3 egg whites
- 1 TBSP melted butter for brushing on the tops
Instructions
- Add 1/4 cup warm water, 1/4 tsp sugar, and active dry yeast to a small bowl or measuring cup. Whisk together and set aside to proof.
- In the bowl of your stand mixer (or a large bowl to use a hand mixer) add both flours, xanthan gum, salt, and 2 TBSP sugar. Mix to combine.
- Pour in remaining 1 1/4 warm water, the proofed yeast mixture, 2 TBSP melted butter, and egg whites to the flour mixture. Turn mixer on and let mix for 3-4 minutes.
- Once you have a thick cake batter consistency, your bread is ready to be shaped and set in a warm place to rise.
- Butter a cast iron pan or baking dish well. With wet hands take about 1/3 cup of batter and shape into a ball, place in buttered dish. Re-wet your hands as needed.
- Continue until all your batter is in balls. Make sure the balls of dough are not touching each other so they have room to rise.
- Brush the tops of each roll with remaining 1 TBSP melted butter.
- Place in a warm place (I put them in my oven with the light on) and let rise for about 45 minutes to an hour. The time will depend on how cold your kitchen is. You want the rolls to almost double in size. They will rise even more during baking.
- Pre heat oven to 400°. Bake rolls in the pre heated oven for about 25 minutes or until the tops are lightly golden brown.
- Take out of the oven and immediately remove from the pan they baked in, onto a wire rack to cool completely. A minimum of 2 hours.
- If you want your dinner rolls to be warm when serving. Simply bake ahead of time and put them back in the oven, right before serving, with your warm setting on. Enjoy!

There are a few tricks to getting a good gluten free bread product. The first is not using an all-purpose gluten free flour. They almost always never turn out. You will likely have to build your own flour base, like I did in this recipe!
The second is always allowing your bread to cool completely out of the pan it baked in, before cutting or eating. The inside has to set up and it doesn’t fully do that while it is baking. This takes a minimum of two hours.
To get that warm dinner roll taste…. Simply bake your rolls ahead of time, let cool completely, and them pop in the oven on the warm setting right before eating to just warm them up a bit!
Cooking these dinner rolls in a cast iron pan brings a smile to my face, however you can use any baking dish to bake them!
