“Mom, can I have a snack??”
If you’re a mom, you probably hear this question multiple times a day. I know I do!!
When I first started out on this healthy journey, I dreaded hearing those words. You see, I was committed to not buying any processed snacks for my girls, so I was always trying to find good healthy snacks that I could have on hand all the time. And in the beginning, I struggled with this….
I had some specific requirements that these snacks had to fall into… The snacks I wanted needed to be easy, fast, and healthy! I didn’t want to have to be up late at night or super early in the morning mixing, stirring, and baking healthy snacks every day.
And then I came across these delicious little balls of joy………..
ENERGY BALLS
They are easy to make, they don’t take very long, they are healthy, and the bonus is….You can’t really mess them up!
JACKPOT!
I have been making these as a staple snack in our house for about 2 years now and the girls still love them week after week. And there is a reason for that….. they are very versatile! I have made them with only peanut butter, with only almond butter, half and half (half peanut butter/half almond butter), or I have even been known to throw a little scoop of Nutella in there for a chocolaty kick and they think its a treat!
I promise you won’t be disappointed… when you find yourself needing a little pick me up in the middle of your afternoon slump, these will satisfy even the moms and dads!
Below our the GF oats and flaxseed that I purchase on Amazon…
Energy Balls
Materials
- 2 Cups Old Fashion Oats, use GF if needed
- 1 Cup Ground Flaxseed
- 1/4 Cup Coconut Flakes
- 1 Cup Mini Chocolate Chips
- 2/3 Cups Raw Honey
- 1 Cup Nut Butter (peanut, cashew, almond etc.)
- 1 tsp Vanilla
Instructions
- Add all ingredients into a medium size bowl. Mix with a spoon and then with dampen hands until it all mixes together.
- Using a cookie scoop or with your hands form into mini balls and place on a cookie sheet.
- Stick the cookie sheet in the freezer for a minimum of 20 minutes. After 20 minutes, put energy balls in a container and store in the fridge.
I use a cookie dough scoop to make my balls uniformed and I pack each ball in tightly before dropping them out onto the cookie sheet, so they hold their shape. But you certainly can just shape them into balls with your hands. You may need to re-wet your hands a couple times during the process if your using only your hands to shape them.

Once you have your mixture in either balls or bars, you are ready to pop them into the freezer for an hour. This just helps them to set properly. But remember, you really can’t mess them up so if they are left in there for over an hour don’t sweat, they are still good! I think I left mine in over night once because I forgot about them…. Talking from experience, you CAN’T mess them up!
Once your hour is up… take them out and enjoy! Store whatever you don’t devour right away in a container in the fridge. If you leave them out, they will get all melted and lose their shape because of the peanut butter and honey. When I pack them for on the go, I just throw them in a Ziploc baggie in a lunch pail with an ice pack and they stay just fine! In the colder months sometimes I don’t even add an ice pack!
What Ingredients We Use Matters…
Now let’s talk about the ingredients for just a moment…. The food you make is only as healthy as the ingredients you put into it. What I mean by that is, you are looking for natural, no additive products.
For example, the peanut butter I typically buy is the Kirkland brand from Costco. If you look at the ingredients there are only 2, peanuts and oil. I know that there is no added sugar or additives in that. So, I feel safe feeding it to my family.
**Although, I do have plans to make my own peanut butter soon so stay tuned for that post!
The same goes for the honey. You want to make sure you are using a good, wholesome raw honey so you know its pure. I buy mine at Costco or even if I can get my hands on some local honey, that’s even better!
Now, go whip up a batch of these delightful energy balls that are easy to make, healthy for your body, and delicious to eat!
