My husband isn’t a big chicken eater. I rarely just grill up a chicken breast, because he just doesn’t like it.
But if I use it in other ways like chicken alfredo, shredded chicken tacos, or chicken sandwiches he will eat it without complaint.
These easy crockpot BBQ chicken sandwiches are the perfect lunch or dinner meal on a busy day or evening. I have even used frozen chicken breasts and they turned out great. You get juicy chicken with such a powerful flavor all wrapped in a sandwich. The perfect meal to satisfy everyone.
Is pulled BBQ chicken sandwiches healthy?
There is such a misconception on health out there. You can find all kinds of fad diets that tell you what is healthy, but are they really healthy?
Now I am not an expert in health and I will never tell someone what they should and shouldn’t eat. But in my experience, working with a good friend who is a dietician, and my own personal research I have learned a ton.
Health doesn’t just mean meat and vegetables. In fact, so many foods are healthy and our body NEEDS them to thrive. Carbs get a bad wrap, when in reality our body needs carbs to function right.
In this recipe, chicken is your protein and the bread is your carb. Add a big ol’ side of sautéed vegetables or salad and you have yourself a complete meal that is well rounded.
Don’t get yourself wrapped up in the thoughts of you can only eat meat and vegetable or all salads to be healthy. You can have healthy nutritious foods that taste amazing too!
This easy recipe calls for simple ingredients that are healthy and taste delicious too.
Ingredients:
- 2 boneless skinless chicken breasts, thawed (can use frozen in a pinch)
- salt and pepper to taste
- 1/2 tsp paprika
- 1/2 tsp onion powder
- 1/2 tsp garlic powder
- 1 cup BBQ sauce (homemade or store bought)
- 2 TBSP worcestershire sauce
- 1/4 cup Italian salad dressing (homemade or store bought)
- 1/4 cup brown sugar
- Hamburger buns or rolls of choice, use gluten free buns if needed
How to Make Easy Crockpot BBQ Chicken Sandwiches:
- Place chicken breast in the bottom of your crockpot or slow cooker.
- Add salt and pepper to taste, paprika, onion powder, and garlic powder over the top of the chicken.
- In a small bowl combine the BBQ sauce, worcestershire sauce, Italian dressing, and brown sugar. Whisk so it is completely combined and there are no lumps. I like to use our homemade BBQ sauce that I can out of our tomatoes in the garden. You can use whatever favorite BBQ sauce your family likes, Sweet Baby Ray’s is a good option if you need to eat gluten free. I have even used half BBQ sauce and half peach BBQ sauce that I had canned and it was delicious!
- Pour the BBQ sauce mixture over the top of the chicken, cover, and cook low and slow all day. Cook time will vary on if you are using frozen or thawed chicken. Cook on low for 5-6 hours or on high for 3-4 hours.
- Before eating, remove lid and take two forks to shred the chicken right in the crockpot. You can also use a hand mixer in the crockpot to get perfectly shredded chicken.
- Add a heaping amount of shredded chicken onto a hamburger bun or roll to get easy BBQ chicken sandwiches that are delicious.
Optional Toppings.
Our favorite way to eat this sandwich is plain. We typically don’t add any toppings to it, other then maybe adding a little extra BBQ sauce if desired. But there are some great toppings you can add to make this simple BBQ chicken sandwich even better!
Try adding some coleslaw on top of this crock pot BBQ chicken. It will give it an added sweetness and tang with a little bit of crunch.
Some other great toppings would be lettuce, pickles, a slice of Swiss cheese, or even some sliced red onion. All these options would add some delicious flavor.
What to do with the leftover chicken.
We always seem to have leftover BBQ chicken after having this meal. Good news is I love leftovers. One of my favorite things to do is to take leftovers and create another delicious meal out of it. This makes for an easy weeknight dinner!
Make sure to store any leftovers in an airtight container in the fridge until you are ready to use it.
This leftover chicken is great in a BBQ chicken baked potato, in a BBQ chicken salad, or as BBQ chicken nachos. When you use up left overs this way, you are not only saving yourself time and less waste, but you are also saving money!
