Using up leftover 4 ingredient crockpot chicken taco meat.
We like to use any leftover chicken in a taco salad, burrito bowls for lunch, an easy taco casserole, or even in shredded chicken taquitos.
The girls prefer their tacos on soft corn tortillas, but I like to fry up corn tortillas in some avocado oil for my husband and I to make hard shelled tacos! Top with your favorite taco toppings, like sour cream, shredded cheese, sliced romaine lettuce, and fresh tomatoes.
These crock pot chicken tacos is an easy dinner idea that your whole family will love, which means it can be a staple in your meal planning line up for a quick and easy dinner!
Ingredients:
- 2-4 boneless skinless chicken breast, it’s okay if they are frozen
- 2 TBSP Homemade Taco Seasoning (or 1 packet of store bought)
- 1 jar of salsa
- 4 oz cream cheese
How to make 4 ingredient crockpot chicken tacos:
- Place chicken breasts, jar of salsa, and taco seasoning in the crockpot. Cook on low for 4-6 hours (the cooking time depends on if your chicken breasts are frozen or not). You can also throw in frozen chicken breasts and cook on high for the same amount of time.
- Just before eating, shred chicken using 2 forks. I don’t take the chicken out of the crockpot, just shred them right inside it. You should have some juice in there from the salsa and the chicken. You can also use a hand mixer to shred your meat. It makes for the perfect shredded meat! I just always use 2 forks because I don’t like digging my hand mixer out.
- Add in cream cheese and give it a good stir until all the cream cheese is melted. I like to cut the cream cheese into small cubes before adding it to the crockpot so it melts faster.
- Serve in hard or soft taco shells with your favorite toppings! Make a side of Spanish rice and some black beans and you have a complete easy tacos meal that your entire family will love on those busy nights.
You can change this meal up some with what jar of salsa you use and how much taco seasoning you put on. We love it with 2 full tablespoons of taco seasoning but if you family doesn’t want that much spice, do less!
You can also do a hot salsa or a mild salsa depending on what your family likes. We don’t ever do a spicy salsa around here, so our shredded chicken taco meat is always a very mild spice.
The best thing is you can change this up to your own picky eaters liking!
Can I use this same recipe with other meats?
Yes you can!
You can take other cuts of meat and do this same recipe and they turn out beautifully.
I have done this with a pork roast and a beef roast. Depending on the size of either roast you will have a longer cook time in the crockpot, but the process is still the same! I wouldn’t recommend throwing a beef or pork roast in frozen though. That would take a really long time and could be rather tough in texture.
Also depending on the size of your roast you may want to add a little bit more cream cheese. It will make it much more creamy!
Busy days and nights on the homestead.
This is on my go-to recipe list when I need something easy but just as healthy and delicious as all my other meals. It seems in the summertime we are always on the go, but our health and nutrition shouldn’t suffer for it.
Having easy delicious dinner on my table every night is what I am shooting for, regardless of how busy we are.
