Lunch time always sneaks up on me. We homeschool, so our mornings are jam packed with school and before I know it everyone is staring at me with wide eyes, starving, and wondering what is for lunch. These homemade chicken taquitos are just the ticket to fill us up.
They are super easy to make but they do take a little planning ahead if you don’t have leftover chicken. A lot of times I will use the left over chicken from a leftover rotisserie chicken the night before.
What I love the most about this meal is you can use left over chicken from a previous meal, use thawed chicken breast, or even frozen! They don’t take very long if you plan ahead and already have your chicken cooked, but if you’re like me and looking to throw something together easily without being prepared, you will be pleasantly surprised at how simple this is.
If it is on the meal plan, I try and take the chicken out the night before, cook it in the morning before school, and then quickly make the taquitos after school is done. This is the simplest way to do it, although I have also thrown frozen chicken breasts in right before lunch and that works too!
These taquitos are a family favorite, so I tried to make them often.
Can I use beef in these?
Yes you can! I have done this same recipe with ground beef.
I will brown the ground beef in a pan and then follow the same recipe for the rest. I have also used this recipe with a left over roast to have shredded beef taquitos.
You can really use any meat you want make it your own.
I usually make these as a lunch but they would make an easy dinner recipe as well. Simply pair them with a side of black beans, seasoned whole pinto beans, refried beans and homemade spanish rice and you have a complete meal that your whole family will love.
These also make great appetizers along with being a main dish.

Ingredients:
- 2 chicken breast
- 3 TBSP taco seasoning, divided
- 1 cup shredded cheddar cheese
- 1/4 cup sour cream
- 20 corn tortillas or flour tortillas if you don’t need to eat gluten free
How to Make Homemade Chicken Taquitos:
- Add chicken to a pot and fill with water to cover. Add in 2 TBSP of taco seasoning to the water. Boil chicken on medium heat until the chicken is done.
- Place chicken on a plate to cool. Once it is cool to the touch. shred the chicken into small pieces.
- Put shredded chicken in a mixing bowl. Add in sour cream, remaining taco seasoning, and shredded cheese. Stir until completely combined.
- Heat tortillas in microwave or in the oven until warm and flexible. They will crack if you skip this step.
- Scoop a spoonful of mixture into the center of the tortilla and wrap them up tightly. Continue to work through all the tortillas until you have used all your chicken mixture.
- Place on a large baking sheet covered in aluminum foil and spray with cooking spray, seam side down so they don’t unravel. I don’t use cooking spray from the grocery store any more. I have a spray bottle that I add avocado oil to for all my cooking spray needs.
- Once all tortillas have been filled and wrapped, spray or drizzle with a little olive oil or avocado oil for browning.
- Bake at 400° for about 15-20 minutes or until the tops of the taquitos are golden brown and they have baked to crispy perfection. Add extra minutes to cooking time if needed, cooking times will vary. Let cool slightly then eat with your favorite dipping sauce!

Some of our favorite dips for these homemade chicken taquitos are homemade salsa, guacamole, sour cream, or even some cheesy queso.
If I have some salsa verde canned on my shelf my oldest daughter loves to dip it in that. You can really find whatever dipping sauce your family enjoys and you can’t go wrong!
Can You make these Dairy Free?
Yes you can! To make them dairy free, remove the cheese and sour cream and just roll up your tortillas with chicken and spices.If you like the dairy free options for cheese and cream cheese, try adding those in to make them creamier.
If you like a spicier taquito, try adding in green chiles, enchilada sauce, or salsa verde to your chicken mixture.
You could even add a little bit of your favorite salsa to the mix for an added little kick. Add any of those in place of the sour cream will help the mixture not be so dry when making them dairy free.
