The best thing about these pizza pinwheels is they are super simple. I am all about simple in the kitchen.
There is a time for more complicated things but on busy days, these make the perfect lunch without a lot of effort.
The dough for this recipe is my whole grain gluten free bread dough. Once you have this recipe, it opens up a whole world of things you can make!

What kind of sauce and toppings to use on these gluten free whole grain pizza pinwheels.
In the recipe below I am using a traditional pizza sauce and mozzarella cheese. But you can make these whole grain gluten free pizza pinwheels however you like!
That is the beauty of cooking from scratch. You can take one recipe and change it up different ways to get multiple different dishes.
Our favorite way is to use a tomato sauce, mozzarella cheese, and any kind of pizza meat you like. This can be canadian bacon, sausage, or pepperoni! Doing it this way will give you all the traditional pizza flavors.

To make the simplest pizza sauce use about 4 cups of fresh or frozen tomatoes and lay them out on a baking sheet in a single layer. This is the perfect way to use up that freezer bag of tomatoes from your garden. Add in about a half an onion sliced and 4-5 cloves of garlic whole on the baking sheet. Drizzle with a little olive oil if desired. Sometimes I don’t do that.
Bake in a 400 degree oven for about 15-20 minutes or until everything is soft and slightly golden.
Dump everything on the tray into a blender with some dried or fresh oregano, basil, salt, and pepper. Blend on high until it is all pureed and completely smooth. You can use this sauce for pizza sauce or on pasta too!
Another favorite way, with an added twist, is to use ranch as the sauce and top it with a combination of mozzarella, parmesan, and cheddar cheese to create cheddar ranch pizza pinwheels. I like to use my ranch powder mix to make up a batch of ranch.

- 2-3 cups of shredded mozzarella cheese or cheese of choice.

How to make whole grain gluten free pizza pinwheels:
- Using a stand mixer, make a batch of my whole grain bread dough. You will want to start with about 1 3/4 cup of warm water in the bread dough instead of 2 cups. You will be rolling this dough out so you want to make sure it is less sticky then usual. It should be pulling away from the sides of the bowl and coming together. It will still be a little sticky but not as much as the bread.
- Butter a cast iron pan or baking dish well so they don’t stick.
- Dump the homemade dough out on a well floured work surface with brown rice flour.
- Divide dough into 2. This will make it easier to work with and roll out then to try and roll a large amount of dough out super thin.
- Start with one piece and roll dough out to about 1/2″ thick into a large rectangle. You don’t want it too thin that you won’t have a good crust but if it’s too thick it will be really doughy.
- Take the rest of the ingredients like the sauce, cheese, and toppings and spread on the dough.
- Using a dough scraper to help when it gets stuck, gently roll up your dough into a long log.
- Use a sharp knife or pizza cutter, cut the log into 1.5″ thick pieces and place on it’s side in my well buttered cast iron pan.
- Let rise for about 5-10 minutes.
- After the dough rises, bake at 425 degrees for 25 minutes.
- Remove your savory rolls from the oven and let cool slightly before serving.

This looks really tasty! Could you please tell me what you mean by “1 Bath” of your whole grain GF bread? I am guessing you mean batch, but I just want to make sure. Also, could this be made with GF sourdough? I would love to see a recipe using discard or something like that. Thanks!
Sorry that was a typo! Yes it is 1 batch. I have never tried it with my GF sourdough, but would be worth trying. You will have to adjust the liquid some as you add the starter instead of active dry yeast.
