Add all ingredients to a bowl. Using about a tablespoon at a time, add water. Keep adding water until you get a dough. Your dough should not be sticky so it's really important to add water slowly.
Roll out your dough between two pieces of parchment paper until you get the thickness you want. If you are making crackers you may want to roll it real thin so you get them to crunch up.
Remove top piece of parchment paper, top with shredded cheese if desired and bake at 375° for about 10 minutes or until slightly golden.
