It’s dinner time, you have been running around all day, and your whole family is staring at you to feed them….
Now before you throw your hands up in the air and decide, “I’m just ordering pizza!” Let me assure you there is a delicious solution AND you will feel good about putting this healthy meal inside your families bodies instead of whatever convenient food you were ready to throw at them!
Lemon Herb Chicken and Potatoes!

This meal is easy, fast, and tastes so good! It takes about 25-30 minutes and the best part is, you cook it all together with hardly any clean up.
Whenever the Rancher is gone, I take the opportunity to not cook! I usually throw at the Rancher Girls breakfast for dinner or any kind of leftovers that I can scrounge up! But this simple fast meal is something I will make whether he is home or not. I would have to say it is even easier then making the girls bacon and eggs for dinner!
Ok so let’s get to it. Here is what you will need :
**Feeds about 3-4 people**
2 chicken breasts
4 cups diced potatoes (I like to use red or golden and not peel the skin off. But peeled and diced russet potatoes are delicious too!)
6 TBSP butter melted
1.5 tsp salt
¼ tsp black pepper
1 tsp basil
1 small lemon
Now this is so easy to throw together:
Cut your 2 chicken breasts into bite size pieces. Then wash and dice your potatoes. The more uniform you get your chicken bites and potatoes the faster it will cook!
Throw both the chicken and potatoes in a bowl together.
In a separate bowl or measuring cup melt your butter, add the spices, and squeeze a bit of the lemon juice into the mixture. It is your call on how much lemon juice you would like to use. I cut my lemon in half and squeeze both sides. But we like a good lemon zest! I also add a little zest from the lemon rind to my herb/butter mixture. This is totally up to you on if you want to add it.
Stir you spices, lemon juice/zest, and butter to incorporate. Pour over your potatoes and chicken and stir until all the pieces are evenly coated.
Dump the whole mixture onto a baking sheet covered with foil (for easy clean up!) that has been sprayed with olive oil or some sort of cooking spray.
** helpful tip! I ditched the yucky cooking sprays from the store years ago. You can buy a refillable sprayer on amazon (I linked the one I have and love below) and continuously refill it with whatever oil you want to coat your pans for none stick with. I usually use olive oil in it!
Ok, so at this point you can pop this tray right into a 425- degree oven for about 20-30 min or until your chicken slices and potatoes are starting to brown a bit.
But here is where the variation comes in…. you can also add a vegetable right onto your tray with your potatoes and chicken for an easy one pan dish! Vegetables like fresh green beans, broccoli, or carrots can go in for the whole time. Other vegetables like asparagus, squash or zucchini I would add in during the last 10-15 min of the cooking time.
Or if you want to just steam some vegetables for the side or throw together a quick salad, that works too! Either way you have a quick, healthy meal in less then 30 minutes!
Now the next time your family is all staring at you to throw together a meal after a long hard day…. Don’t stress! You can have a healthy, easy, hot meal on the table in 30 minutes that will satisfy any appetite!
